Crispy Brussels Sprouts Tacos with Avocado Lime Sauce

Ingredients
  

For the Brussels Sprouts:

  • 500 grams or 4 cups Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

For the Avocado Lime Sauce:

  • 2 ripe avocados
  • Juice of 2 limes or lemons
  • 2 cloves garlic minced
  • 2 tablespoons fresh cilantro / coriander chopped
  • Salt and pepper to taste

For Serving:

  • 8 tortillas warmed

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the trimmed and halved Brussels sprouts with olive oil, smoked paprika, ground cumin, salt, and pepper. Toss until the sprouts are evenly coated.
  • Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.
  • While the Brussels sprouts are roasting, prepare the Avocado Lime Sauce. In a blender or food processor, combine the avocados, lime juice, minced garlic, cilantro, salt, and pepper. Blend until smooth and creamy. If needed, add a splash of water to achieve your desired consistency.
  • Once the Brussels sprouts are done, remove them from the oven and let them cool slightly.
  • To assemble the tacos, spread a generous spoonful of the Avocado Lime Sauce onto each warmed tortilla. Add a portion of the crispy Brussels sprouts on top.
  • Optionally, garnish with extra cilantro or any other toppings of your choice.
  • Serve the tacos warm and enjoy!
