Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the trimmed and halved Brussels sprouts with olive oil, smoked paprika, ground cumin, salt, and pepper. Toss until the sprouts are evenly coated.
Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.
While the Brussels sprouts are roasting, prepare the Avocado Lime Sauce. In a blender or food processor, combine the avocados, lime juice, minced garlic, cilantro, salt, and pepper. Blend until smooth and creamy. If needed, add a splash of water to achieve your desired consistency.
Once the Brussels sprouts are done, remove them from the oven and let them cool slightly.
To assemble the tacos, spread a generous spoonful of the Avocado Lime Sauce onto each warmed tortilla. Add a portion of the crispy Brussels sprouts on top.
Optionally, garnish with extra cilantro or any other toppings of your choice.
