Ingredients
  

  • 2 medium eggplants sliced into rounds
  • ripe small tomatoes sliced in half
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh herb leaves for garnish

Instructions
 

Grilling the Eggplant:

  • Preheat your grill or grill pan over medium-high heat.
  • Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
