Ingredients
  

  • 113 grams or 1/2 cup vegan butter softened
  • 100 grams or 1/2 cup granulated sugar
  • 110 grams or 1/2 cup brown sugar
  • 60 grams or 1/4 cup unsweetened applesauce
  • 5 mL or 1 tsp vanilla extract
  • 240 grams or 2 cups all-purpose flour
  • 5 grams or 1 tsp baking soda
  • 2.5 grams or 1/2 tsp baking powder
  • 2.5 grams or /2 salt
  • 180 grams or 1 cup vegan chocolate chips

Instructions
 

  • Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened vegan butter, granulated sugar, and brown sugar until well combined.
  • Add in the applesauce and vanilla extract. Mix well.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the vegan chocolate chips.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
