Instructions
Preheat your oven to 180°C (350°F) and grease a 9x9 inch square baking pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a separate large bowl, cream together the softened vegan butter and granulated sugar until light and fluffy.
Prepare your chosen egg replacer according to the package instructions and add it to the butter-sugar mixture. Then, mix in the agave nectar (or vegan honey) and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the diced apples and almond milk.
Pour the batter into the prepared pan and spread it out evenly.
If desired, sprinkle chopped nuts on top for added texture and flavor.
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
My preference for fake egg in cake has always been - 1 egg = 1 tablespoon ground flax mixed with 2 tablespoons of hot water.
