Brussels Sprouts and Smoky Tempeh Skewers

Marinated tempeh in a smoky BBQ sauce, skewered with roasted Brussels sprouts.

Ingredients
  

  • 250 g 9 oz tempeh, cut into cubes
  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

For the Smoky BBQ Sauce:

  • 1/2 cup ketchup
  • 2 tablespoons molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper adjust to taste
  • Salt and black pepper to taste

For the Roasted Brussels Sprouts:

  • 250 g 9 oz Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions
 

Marinating the Tempeh:

  • In a bowl, combine soy sauce, maple syrup, apple cider vinegar, minced garlic, liquid smoke, smoked paprika, and black pepper.
  • Add the tempeh cubes to the marinade and let them soak for at least 30 minutes. You can marinate them for longer if you have the time.

Making the Smoky BBQ Sauce:

  • In a small saucepan, combine ketchup, molasses, apple cider vinegar, soy sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  • Cook over low heat, stirring occasionally, for about 10 minutes, or until the sauce thickens slightly. Set aside.

Roasting the Brussels Sprouts:

  • Preheat your oven to 200°C (400°F).
  • Toss the halved Brussels sprouts with olive oil, salt, and black pepper.
  • Spread them out on a baking sheet in a single layer.
  • Roast for 20-25 minutes, or until they are golden brown and tender.

Assembling and Cooking:

  • Preheat your grill or a grill pan over medium-high heat.
  • Thread the marinated tempeh onto skewers.
  • Grill the tempeh skewers for about 3-4 minutes on each side, or until they are nicely browned and heated through.
  • Brush the tempeh with the smoky BBQ sauce during the last few minutes of grilling.

Serving:

  • Serve the grilled tempeh skewers with the roasted Brussels sprouts on the side.

Optionally, drizzle extra smoky BBQ sauce over the tempeh for added flavor.
