Ingredients
  

  • 1 cup or 240 ml apple cider
  • 1 3/4 cups or 220 g all-purpose flour
  • 1/2 cup or 100 g granulated sugar
  • 1/4 cup or 60 ml unsweetened almond milk (or any plant-based milk of your choice)
  • 1/4 cup or 60 ml vegetable oil
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract

For the coating

  • 1/2 cup or 100 g granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp vegan butter melted

Instructions
 

Prepare the Apple Cider:

  • In a saucepan, heat the apple cider over medium heat. Simmer it until it reduces to about 1/4 cup (60 ml). Let it cool.

Preheat the Oven:

  • Preheat your oven to 350°F (180°C) for both American and British metrics.

Mix Dry Ingredients:

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

Combine Wet Ingredients:

  • In a separate bowl, mix together the reduced apple cider, almond milk, vegetable oil, and vanilla extract.

Combine Wet and Dry Mixtures:

  • Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix.

Fill the Donut Pan:

  • Grease a donut pan and spoon the batter into a piping bag or a zip-top bag with the corner cut off. Pipe the batter evenly into the donut molds.

Bake:

  • Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted comes out clean.

Prepare the Coating:

  • In a shallow bowl, combine the granulated sugar and cinnamon.

Coat the Donuts:

  • Once the donuts are cool enough to handle, brush them lightly with melted vegan
